Cibreo est sans aucun doute l&rsquo;un de ces lieux. C&rsquo;est un petit univers de go\u00fbt, d&rsquo;art et de culture au c\u0153ur de Florence. Ce n&rsquo;est pas un restaurant, ce n&rsquo;est pas un caf\u00e9, ce n&rsquo;est pas un march\u00e9, ce n&rsquo;est pas une acad\u00e9mie. C&rsquo;est tout cela \u00e0 la fois !<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Cibreo a \u00e9t\u00e9 fond\u00e9 en 1979 par un visionnaire <a href=\"https:\/\/www.cibreo.com\/fabio-picchi\/\" target=\"_blank\" rel=\"noopener\">Fabio Picchi<\/a> alors qu&rsquo;il n&rsquo;avait que 25 ans. Il s&rsquo;agissait de son premier restaurant, mais il \u00e9tait d\u00e9j\u00e0 impr\u00e9gn\u00e9 d&rsquo;une id\u00e9e qui le diff\u00e9renciait imm\u00e9diatement de la masse des trattorie servant des<em> ribollita<\/em>, des steaks florentins et des <em>pappa al pomodoro.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" src=\"https:\/\/www.studiainitalia.com\/wp-content\/uploads\/2023\/03\/culinary-academy-florence.jpg\" alt=\"culinary academy florence\" class=\"wp-image-97926\" title=\"\"><\/figure>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Aujourd&rsquo;hui encore, sous la direction de Giulio Picchi, le fils de Fabio, la cuisine du restaurant Cibreo est tourn\u00e9e vers le pass\u00e9 et le territoire, mais aussi vers un avenir meilleur. Les menus suivent principalement le rythme des saisons : ils semblent fixes, mais en r\u00e9alit\u00e9, ils \u00e9voluent entre l&rsquo;hiver, le printemps, l&rsquo;\u00e9t\u00e9 et l&rsquo;automne et changent tous les mois, toutes les semaines et tous les jours.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Le restaurant doit son nom \u00e0 une ancienne recette toscane d&rsquo;abats de poulet, le cibr\u00e8o. Ce plat a rempli de joie l&rsquo;enfance de Fabio Picchi, cuisin\u00e9 par sa m\u00e8re pour les grandes occasions et repropos\u00e9 le lendemain dans de succulentes sauces.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Au fil des ann\u00e9es, Cibreo est devenu le lieu id\u00e9al d&rsquo;\u00e9change culturel et de promotion sociale dans le quartier de Sant&rsquo;Ambrogio.
