You will explore the history of the grapevine and its role in Italian culture. You will examine how local Tuscan grapes and specific climates shape a wine’s personality, blending tradition with modern techniques.

Engage in hands-on fieldwork with the Chianti Rufina Consortium. You will master the timing of the harvest, from picking the best grapes to the initial processing.

Viticulture & Sustainability

Investigate eco-friendly farming and vineyard care. This module compares soil health and pruning methods across conventional, organic, and biodynamic systems.

The Science of the Cellar

Analyze the chemistry behind the bottle. You will monitor how yeast behaves during fermentation and maceration to control the wine’s final aroma, color, and mouthfeel.

Sensory Analysis & Branding

Sharpen your palate through expert-led tastings. You will evaluate wines through sight, smell, and taste while designing food pairings. We also link scents to memory and emotion to build a strong brand “nose.”

Marketing & Packaging Design

Construct a brand from the ground up. You will study storytelling and market positioning, then apply those ideas to label design, naming, and choosing the right materials to increase product value.

Regulations & WSET Certification

Navigate the complex world of Italian wine laws (DOCG, DOC, IGT). You will also identify global market trends and earn your WSET Level 1 Award to boost your professional profile.

Winemaking

Craft your own signature blend. Working with experts, you will tweak the structure and balance of a wine to produce a unique cuvée that reflects your personal style.

Final Project

ENROLL ONE OF OUR COURSES

Before you enroll, a personal interview with the school’s staff will be arranged, which will help us verify your language skills and motivations.

PARTICIPANTS

There is a maximum of 12 students. There are no previous requisites. When we handle your application, we will pay special attention to your motivation and your personal vision.

REQUIREMENTS

A high school diploma; high-intermediate (B2) level of English or Italian language (enough to understand and to participate in lessons); 18 years of age at the time of application.

ATTENDANCE

Attendance is compulsory. Classes and workshops are held from Monday to Friday, from 9:30am to 5:30pm.

STARTING DATES

Our training programmes starts twice a year: beginning of February and beginning of September.

HOUSING

The school provides students with information and support help you find accommodation during for the duration of your course. Living expenses are not included in the tuition fee.
