If you are more of a carnivore, don’t miss on “trippa alla fiorentina” with tripe, sautéed in olive oil, onions, tomatoes and parmesan, or the flagship “bistecca alla fiorentina”, a thick porterhouse cut of beef made from the local Chianina cattle breed.
